Note from Joe

I'm going to plan on Saturday Lunch. That will be the easiest for the meat marinade and also will not muddy up the dinner plan. I'm going to do corn tortillas, possibly purchased from La Tapatia, possibly hand-made. Lowell, I just ordered a tortilla press and I think the pace of the meat cooking will be such that one is plenty. I'm also going to see about some sauce from La Tapatia but maybe a note in the Colestine Blog, Steph, could encourage folks to bring their favorite taco sauce? Just an idea...Other than that, some onions, cilantro, and limes will do the trick. Maybe we could ask for that as well and I will provide pork, tortillas, and the rotisserie...and the marinade.....
